19 Jan Wheat, Sugar and Dairy Free Pancakes
It’s not Pancake Tuesday, but I’m having my own guilt free pancake Tuesday. I’m on the go all day today and will need to refuel. It is so easy to pick up any sandwich or wrap from the garage but I usually feel a bit rubbish afterwards.
I got up this morning and rooted out a recipe that nutritionist Jennifer gave to me. #PlanAhead
What you need
3 large eggs
3 cups of almond flour
Heaped tblsp flaxseed
Cup of coconut milk
1/2 tsp salt
1/2 tsp baking soda
3 tblsp coconut oil
How I did it
1. Whisk the eggs, add milk and oil
2. Mix the flour, salt, baking soda and flax
3. Whisk 1 & 2 together
4. Heat some oil or butter in the pan and away you go!
I made 3 large sized pancakes and left the remaining batter in the fridge for himself to have too!
