Renowned for being the most important meal of the day, Chef Shane Rigney shares what he believes “could not be a better start to your day!” This breakfast bowl is filled with enough protein to keep to on top of your game all morning.
Providing rich omegas and essential fats, this tasty smoked salmon and egg combination can be eaten as a hearty breakfast or even as a preworkout meal. This dish also contains Chef Shane’s favourite (amongst many) veggie and superfood: spinach and pumpkin seeds. Spruced up with a little extra virgin olive oil, lemon, salt and pepper, here’s how to kickstart your day the right way.
What you’ll need:
- A few slices of good quality smoked salmon (about 50g, and try organic if you can)
- A big handful of baby spinach leaves
- 1 egg boiled as you like (3 minutes for soft or 5 minutes for hard)
- A wedge of lemon
- A drizzle of extra virgin olive oil
- Salt and pepper
What to do:
Assemble all the ingredients, snap a picture to send to us and enjoy! Perfect to prepare in tupperware for an on-the-go breakfast, or en route to the gym, prepped the night before.
